چکیده

Previous work has shown that cholesterol esters are relatively insoluble (<5 mol%) in bilayer phosphatidylcholine and sphingomyelin systems, but exhibit greater solubility in hexagonal (HII) phase anhydrous phosphatidylcholine systems obtained above 100°C. We examine here the influence of cholesterol esters of varying unsaturation on fully hydrated egg phosphatidylethanolamine systems, which undergo a bilayer to hexagonal (Hll) phase transition as the temperature is increased through TBH = 28°C. We show that all esters investigated (cholesteryl stearate, myristate, oleate, linoleate and linolenate) progressively decrease TBH as the mole fraction of ester is increased to at least equimolar proportions. The more unsaturated species have larger effects. These results indicate that cholesterol esters are miscible in phosphatidylethanolamine dispersions and suggest a 'cone' shape of intercalated cholesterol ester. Further, the major influence of cholesterol esters on phospholipid phase structure appears to be determined by the nature of the esterified fatty acid.

The modulation of protein kinase C activity by membrane lipid bilayer structure.

The hypothesis that protein kinase C (PKC) activity is sensitive to phospholipid head group interactions was tested using lipid bilayers of defined composition with PKC purified from rat brain. The head group interactions were modulated by varying phosphatidylcholine cis-unsaturation, vesicle curvature, and by the addition of phosphatidylethanolamine and cholesterol. With unilamellar vesicles (...

Dependence of biodiesel fuel properties on the structure of fatty acid alkyl esters

Biodiesel, defined as the mono-alkyl esters of vegetable oils or animal fats, is an balternativeQ diesel fuel that is becoming accepted in a steadily growing number of countries around the world. Since the source of biodiesel varies with the location and other sources such as recycled oils are continuously gaining interest, it is important to possess data on how the various fatty acid profiles ...

The Influence of Sodium Glycocholate on the Enzymatic Synthesis and Hydrol- Ysis of Cholesterol Esters in Blood Serum*

The presence of a cholesterol esterase in blood serum was demonstrated by the finding (1) that a marked esterification of free cholesterol occurs on incubation of untreated serum, but does not occur on incubation of serum which has previously been heated for 1 hour at 55-60’.1’ In studying this reaction further it was of interest to ascertain the effect of bile salts, first, because it is known...

Thermo-oxidation of cholesterol: effect of the unsaturation degree of the lipid matrix.

The influence of the unsaturation degree of different triacylglycerols (tristearin, triolein, trilinolein and trilinolenin) on cholesterol oxidation at 180 °C, was evaluated. Cholesterol degraded faster when heated alone than in the presence of triacylglycerols; moreover, the more unsaturated the matrix, the slower the degradation of cholesterol. Both cholesterol and triacylglycerols degradatio...

Unsaturated lipid matrices protect plant sterols from degradation during heating treatment.

The interest in plant sterols enriched foods has recently enhanced due to their healthy properties. The influence of the unsaturation degree of different fatty acids methyl esters (FAME: stearate, oleate, linoletate and linolenate) on a mixture of three plant sterols (PS: campesterol, stigmasterol and β-sitosterol) was evaluated at 180 °C for up to 180 min. Sterols degraded slower in the presen...
